Demi Sec
This Cuvèe is an assemblage of 50 different crus. The traditional assemblage of Demi-Sec is 40-45% Pinot Noir, 30-35% Meunier and 20-25% Chardonnay, selected by the most generous wines. The wine is integrated by 20-30% vins de reserve, individually preserved, according to the origin of the vineyard and the vintage, ensuring the perseverance of Veuve Clicquot. The high dosage when disgorging (45g/l) grants a delicate aromatic harmony, while preserving freshness.
It has a good yellow colour, with golden reflexes, a regular effervescence and a stong smell of ripe fruit (candy citrus, fruity spirit), as well as croissant and toasted bread.
It is round and supple, yet fresh, thanks to a light acidity. The ripe fruit is more than perceivable. It has a great balance and this Veuve Clicquot Demi-Sec is perfect for fruity desserts: citrus gratin, tarte Tatin, apricot charlotte, but also ’île flottante, crêpe suzette and crème brûlée.
It rests in the cave for 2 or 3 years and the Demi-Sec develops touches of praline and toasted notes. This is the point, when caramel desserts or coffee cakes can accompany the wine perfectly.
Faithful to the typical structure of the Champagnes of the Maison, it has a higher sugar concentration, without altering its freshness and strength.
