The Champagne Courcelles 2014 by Tristan Hyest is a cuvée composed of 75% Chardonnay and 25% Pinot Noir grapes harvested from the Lieu-Dit named Courcelles, in the terroir of Tristan Hyest‘s house in Trélou-sur-Marne, in Vallée de la Marne. Born entirely from the 2013 vintage, this limited edition Champagne (only 768 bottles and 24 magnums) is a symbol of the elegance of the terroir from which it comes. No final dosage – making it a Brut Nature – to preserve all its characteristics.
The Cuvée Courcelles 2014 by Tristan Hyest presents itself to the nose with notes of ripe fruits, yeasts and honey. The palate is round and long, and the bubble thin, so that you can perceive hints of dried fruit in the end. Excellent throughout the whole meal with fish dishes, but also with white meats such as chicken.
