The Champagne Triptyque by Timothée Stroebel is a blend of Meunier, Chardonnay and Pinot Noir from three plots located near Villers Allerand but growing on 3 different soils: sandy, chalky and clayey. The Cuvée is the result of 3 harvests (2014-2016 and 2017) and vinification occurs without any intervention, while the wine evolves at its own pace. Alcoholic fermentation occurs with indigenous yeasts and malolactic fermentation is due to indigenous bacteria. Vinification and ageingtake place in large oak barrels. The wine is neither filtered nor cold pressed. No final dosage (0 g/l) – making it a Brut Nature – for this decisive and deep Champagne d’assemblage. Limited production of only 5,734 bottles.
