The Champagne Hèraclite by Timothée Stroebel comes from a single vine, Pinot Noir, and from two parcels (Lieux-Dits) of old vines (over 50 years old) located near Villers Allerand, a village classified as Premier Cru in the Montagne de Reims. The grapes were harvested in 2017; vinification occurred without any intervention and the wine evolved at its own pace. Alcoholic fermentation is carried out with indigenous yeasts, while malolactic fermentation is due to indigenous bacteria. Vinification and ageing take place in large oak barrels. The wine is neither filtered nor cold pressed. No final dosage (0 g/l) – making it a Brut Nature – for this fascinating and atypical Champagne Blanc de Noirs. Limited production of only 1,735 bottles.
