The 2012 winter, initially mild, unleashed its full force in February, when freezing temperatures reached -10 degrees with a real shock effect on the buds. Spring was long in coming, and with its heavy rainfall and freezing nights it put a strain on the flowering. After an equally rainy July, August arrived with impetuousness and an abnormal heat wave. In this vintage, the grapes were put to the test: first too wet and then too dry; nevertheless, what was revealed by the first tastings in the tank was marvellous amazement. A great wine, full of luminosity and wonder, a mix of sugars, beautiful acidity and magnificent potential.

The limpid and luminous yellow gold colour is reminiscent of the facets of a yellow diamond, the eye accompanies the nose, characterised by an important stony and chalky minerality, with floral notes of crisp rose and spice. After a proper oxygenation, Champagne Salon 2012 releases its seductive notes of pineapple and lychee and a touch of smoke. The palate is fresh, dominated by a forthright acidity, the prelude to a prodigious ageing process that can last over 15 years. The aromatic structure resembles an infinite caress, an inner smile. Salon 2012 is an infinite Champagne.
