Salon (Edition 2019) 2006
Directed by Aimé Salon until his death in 1943, the Maison was then left to his nephew. In 1988, the family-owned Maison Laurent-Perrier became the majority shareholder in Champagne Salon. Today, the Maison Salon, along with its old neighbour and sister, Maison Delamotte – the fifth oldest Maison of Champagne, founded in 1760 – is run by a man, Didier Depond.
Consecrated by critics and drinkers, Salon with its great elegance, power and absolute longevity continues to be a reference among the icons of Blanc de Blancs. The wine is made from a single Cru, Grand Cru Mesnil sur Oger, from a single variety, Chardonnay, and made in extremely limited quantities and only when the vintage is judged excellent by the criteria of the Maison.
Salon 2006 was a generous edition, since the soils of the vineyards located in Le Mesnil-sur-Oger were at their best for that rich vintage. Fruit of the best 100% Chardonnay grapes harvested from 19 plots located in the Grand Cru village of Le Mesnil-sur-Oger, in the renowned Côte des Blancs, its vinification occurred in steel tanks with no malolactic fermentation and followed an aging period on its own yeasts for over 10 years. The last phase of the process is the “dègorgemet” when the wine gets its final dosage, usually amounting to less than 5 g/l. Only 62,000 bottles were produced for this delicate, broad and lively Champagne Blanc de Blancs.
