Joyeuse Jèroboam
The Champagne Joyeuse by Pinot-Chevauchet is the result of the assemblage of 80% Meunier and 20% Chardonnay harvested from old vineyards located near Pierry and Moussy, Premier Cru villages in the Vallée de la Marne. First fermentation occurs in steel with natural yeasts for alcoholic and malolactic fermentation which takes place in spring. The second fermentation takes place on its own yeasts for at least 4 years with a final dosage of 5 g/l – to better preserve the characteristics of its terroir of origin.
