Champagne Perseval-Farge
Cuvée 197 Millésime 2004
The Champagne Cuvée 196 Millésime 2004 by Perseval-Farge is composed of 53% Chardonnay, 7% Meunier and 40% Pinot Noir, from the village Premier Cru of Chamery, in the Montagne de Reims. This Cuvée Millésime of the Domaine Perseval-Farge ferments for a part in steel and for about 27% in oak barrels, only partially carrying out the malolactic fermentation. The dosage is 5.5 g/l of sugar – making it a Brut.
Cuvée 196 is one of the true flagships of the entire production of the Domaine, a Millésime of great potential and perspective. The nose is complete, varied and iridescent: fresher aromas of white fruits and citrus fruits, alternate with more mature hints of candied fruit, honey, almond and custard. In the mouth it is decisive, it fills the sip with a great aromatic charge, minerality and acidity. A long and very pleasant finish, to be tried at the end of the meal with hard and soft cheeses of the French or Italian tradition.
