Rosé de Saignée Sève 2015
Olivier Horiot‘s Champagne Rosé de Saignée Sève is made from 100% Pinot Noir grapes from the parcel (Lieu-Dit) “En Barmont“, in the Ricey village, Côte des Bar.
This Rosé de Saignée is characterized by a 4 days carbonic maceration process. This vinification technique adopted for the production of new wines does not require the pressing of grapes; in fact, after harvesting, bunches are placed, still whole, in steel tanks, which are hermetically closed and then filled up to saturation with carbon dioxide.
Harvest 2015, Champagne Rosé de Saignée Sève vinifies and ages in barrels for over 60 months, has a minimum addition of sulfites and no final dosage (Brut Nature).
This cuvée represents the simplest and most intimate expression of the terroir of the lieu-dit “En Barmont”: red clay and Kimmeridgian limestone with a south-eastern orientation which transmit excellent structure, flavor and minerality.
Intense aroma of rose, violet, strawberry and cherry; vinous but refined. Dry, fresh, smooth taste with a long, juicy ending.
Limited edition of 3,841 bottles and 80 Magnum. Bio certified.
