Œil de Perdrix

The Champagne Œil de Perdrix stands for a particular Champagne type, following the old traditions of the village of Bouzy. It is neither a Champagne Blanc de Blancs nor a Rosé, but its colour recalls amber. It comes from a direct and short maceration of Pinot Noir, adding the pink colour to the must which is preserved for the complete vinification. Jean Vesselle is one of the fewest producers embracing this old tradition.
