Champagne Diebolt-Vallois

The Champagne Blanc de Blancs Fleur de Passion by Diebolt-Vallois is a real Cuvée de Prestige, theorically invented by Jaques’s grandfather in 1953 and then only realised in 1992, after inspiration from the famous Cuvée de Prestige by the big Maisons. The 100% Chardonnay grapes come from 7 selected and old parcels in Cramant, among which the lieu-dit “Les Buzons”, aged over 70. The alcoholic fermentation occurs in barrique barrels. No malolactic fermentation and filtration for this wine. All processes that could potentially stress the wine are avoided, so that its terroir is able to express at its best. To the palate it is mineral and fruity, with a light touch of aromatic herbs.
2008 was an exceptional vintage, rich in minerality, very chalky and destined for long ageing. Thanks to its perfectly balanced acidity, this vintage is considered by many to be the vintage of the century.
