Pinot Noir 2010
The Champagne Pinot Noir 2010 by Charlot Père & Fils is made of 100% Pinot Noir grapes from the lieu-dit Les bois Sercelins owned by Domaine. Fermentation takes place spontaneously with indigenous yeasts only in fût de chêne, aging for over a year in oak vats with weekly batonnage to avoid oxidation. Then the second fermentation continues in bottle on its own yeasts for at least 60 months. No final dosage – making it a Brut Nature – and a little addition of sulphites for this explosive limited edition Champagne Blanc de Noirs.
