The Champagne Les Justice by Domaine Bourgeois-Diaz is a Blanc de Noirs from 100% Meunier grapes harvested on clay-limestone soils from a single vineyard plot planted in 1963. Harvest 2017 with vinification in horizontal sandstone “eggs” of 300 litres, followed by ageing under cork on its own yeasts for around 48 months. No final dosage – makint it a Brut Nature.

The Champagne Les Bien Aimées has a straw-yellow colour to the eye. To the nose it is relatively evolved, reminiscent of the yellow wines of the Jura. On the palate, the oxidation perceived on the nose is much more subtle, bringing a superb complexity to the wine, combined with a great savouriness and finesse, leaving a very fresh and long finish.
