Bollinger R.D. 2007
Madame Bollinger created the first vintage of this now legendary Cuvée de Prestige, Bollinger R.D., in 1961 together with the launch of R.D. 1952, where R.D. is an acronym for “Récemment Dégorgé” (recently disgorged). Bollinger R.D. is the result of Madame Bollinger‘s great vision: an evolved Champagne, with aromas enhanced by its exceptional and long maturation on its own yeasts, for over 12 years.
Only twenty vintages have been released since then, and here is the twenty-first: Bollinger R.D. 2007, made exclusively from the first pressing (tête de cuvée) of 14 crus, 91% of which are Grand Crus and 9% Premier Crus.
Bottled with cork even for the second fermentation (to improve ageing), the wine is manually remuaged and disgorged. Since Bollinger R.D. is to all intents and purposes La Grande Année with much longer ageing, developing new levels of complexity, the blend is therefore no secret: 70% Pinot Noir and 30% Chardonnay, with a final dosage from 3 to 4 grams of sugar per litre, making it an Extra Brut.
With the 2007 vintage, the label is reinstated in aluminium alloy as for the legendary 1952 vintage, the first of the Bollinger R.D. and the first label in the Champagne region to bear the date of disgorgement.
Bollinger R.D. 2007 introduces itself to the eye with intense golden reflections. The nose is complex and opens with aromas of honey and brioche, followed by a range of spices (ginger, cumin and others), before evolving into notes of mirabelle plum, dried apricot and fresh hazelnut. The palate has a lively, clean opening revealing notes of white plum, walnut and aniseed. An Extra Brut Champagne of great freshness with incredible tension.
