The Champagne Brut Blanc de Blancs by Boizel is a pure Chardonnay, resulting from the assmeblage of Grands and Premiers Cru in Côte des Blancs. Every single Cru has a special feature: Chouilly for its flowery nuances, Le Mesnil sur Oger for its mineral content, Cramant for elegance and structure, Vertus for its fruity touches. These great Chardonnays develop their full potential during the long fermentation process: creamy fineness, elegance, character but also delicacy. Its light gold colour with shining green reflexes is enriched by a fine and persistent perlage. The flowery bouquet reveals aromas of acacia flowers and hawthorn, with seducing touches of croissant and honey, as well as almond and citrus. Its surprising roundness is equal to its harmony. The creamy structure, yet delicate, has a taste of hazelnut, grapefruit and pastry, well balanced by a refined minerality. The final taste is persistent, fresh and delicate. An important happy hour for its maturity and structure, marvellously matches white meats, as well as sea fruits and fish in general.
