Cuvée Nicolas François Magnum 2007
The Cuvée Nicolas François by Maison Billecart-Salmon was created in 1964 to honour its founder. It is the result of blending the best grapes harvested only in villages classified as Grand and Premier Crus (79% Grand Cru and 21% Premier Cru), among which: Ambonnay, Äy, Mailly and Verzenay for Pinot Noir; and Avize, Choully, Cramant and Le-Mesnil for Chardonnay. The 2007 vintage and more than 10 years of ageing on its yeasts characterise the broad and generous character of a fine and elegant style, giving balance and maturity to this extraordinary Cuvée de Prestige.
The Cuvée Nicolas François 2007 is golden yellow in colour with brilliant highlights. The crystal-clear and sparkling visual perception gives the effervescence a rise of finely chiselled bubbles. To the palate the balance of a tension is reached by the wine’s flowering (peach in syrup, fine apple pie and mountain butter) and symbolised by the conduct of noble flavours (fresh fig and small berries). To the nose it is rich and complex, and at the same time refreshing. Fine and intense notes of orchard fruit, associated with the character of stone fruits (Mirabelle plum, Bigarreau cherry) are underlined by the intensity of a floral persistence (hawthorn).
